Also known as Allium nigrum, Black Garlic is a species of onion and can grow to a height of 80-100cm. The scape, or stalk, carries a dense umbellate inflorescence with purple star-like flowers. The allium flower symbolises unity, humility and patience. The Latin root of the word onion, "unio," means one or unity, and the plant was given this name because it grows from a single bulb. Alliums are edible, although only the bulbs and leaves are usually consumed.
