
A symbol of the abundance of the autumn harvest, the rather sculptural squash comes in many wonderful varieties, shapes and sizes. They are thought of as a vegetable but are in fact a fruit. They are also something of a superfood, being exceptionally high in vitamin A and also rich in vitamins B6 and C, folate, magnesium, fibre, riboflavin, phosphorus, and potassium.
Fun fact: the name Squash comes from the Narragansett Native American word askutasquash which means “eaten raw or uncooked.”
